1 Bag Of Florette Crispy Salad
½ Red Onion, Thinly Sliced
Dressing –
2 Avocados, Halved And Stones Removed
1 Lime, Juiced
2 Tsp Apple Cider Or White Wine Vinegar
2 Tbsp Extra Virgin Olive Oil
½ Tsp Smoked Paprika
Salt & Pepper
Put the dressing ingredients in a food processor and then blend until very smooth, around 60-90 seconds. Add a little water if its very thick. Season with salt and pepper.
Arrange the salad leaves and red onion in a salad bowl and drizzle over the lime-avo dressing. Sprinkle with paprika to serve – this is perfect to enjoy alongside simple chicken or fish!
