Korean Gochujang

Ingredients

Serves: 1

60g cooked chicken, sliced into bite size chunks 

2 tsp gochujang paste 

1 tbsp light mayonnaise 

1 plain tortilla wrap 

Red pepper, thinly sliced 

Avocado, thinly sliced 

Handful of spinach 

Handful of grated cheese 

Salt and pepper to season 

Method

  1. Mix the chicken with 1 tsp gochujang paste until evenly coated.   
  2. Mix another 1 tsp gochujang with 1 tbsp mayonnaise. 
  3. Lay the tortilla wrap on a flat surface and spread the gochujang mayonnaise in the middle square (imagine the wrap will be folded in on itself). 
  4. Add the chicken, pepper, avocado, spinach and cheese.  
  5. Fold the tortilla like a square envelope – try to make the edge meet to make a seal but don’t worry too much as a little gap just makes for a crispy cheesy bit! 
  6. Heat your air-fryer to 200°C and place the wrap, fold-side down in the air-fryer tray.  
  7. Cook for 4-5 mins until lightly golden on top. 
  8. Cut in half to expose that melty hot mess and serve with your favourite Florette salad and Korean slaw for a crunchy contrast!
