Heat large frying pan until very hot then brown the mince. Remove from pan. Add oil, fry 1 onion and pepper until just softened.
Turn up the heat, add garlic, cooked mince, cumin, paprika and chilli powder, stirring well. Add the salad tomatoes, cook until they have just broken down. Season well.
To make salsa, mix cherry tomatoes with red onion, coriander and a squeeze of lime.
Spoon the beef mixture into the taco shells, add some salsa and dollop a little sour cream along the top. Finish with a handful of Florette Sweet & Crunchy leaves, serve straightaway.
