Ingredients

  • 4 cooked beetroots – our no vinegar mess-free beetroot in perfect!
  • Juice of half a lemon
  • 1 1/2 cups oats
  • 2 cups your preferred milk
  • 2 cups yoghurt
  • Mixed berries of your choice
  • 2 tablespoons maple syrup
  • Mint to garnish

Method

  1. Blend the beetroot and lemon juice with a stick blender or in a food processor.
  2. Stir through the oats and add the milk.
  3. Split between two bowls or mason jars and pop in the fridge with some paper or cling film on top for at least an hour or overnight.
  4. When ready to serve (best within 36 hours) layer your yoghurt and berries on top, and finish with a drizzle of maple syrup and fresh mint sprigs.
  5. Enjoy digging in and mixing those amazing pink beetroot oats through the yoghurt and syrupy fruit!
