Classic Crispy

Ingredients

2 chicken breasts 

extra virgin olive oil, salt & pepper 

1/3 cup BBQ sauce 

2 whole sweet corns 

1 bag of Florette crispy salad 

2 large tomatoes, chopped 

1 red onion, chopped 

1 cup grated cheddar cheese 

250g crushed tortilla chips 

Ranch dressing 

BBQ sauce 

Method

  1. Brush the chicken breasts with extra virgin olive oil then sprinkle with salt and pepper. Grill under medium-high heat for 3-4 minutes a side, brushing with with BBQ sauce after turning. 
  2. Boil the corn for 5 minutes to cook then pat dry and pan fry over a high heat for a few minutes to char. 
  3. When cooked through allow the chicken and corn to cool slightly before chopping into bitesize chunks. 
  4. On a large chopping board lay out the salad leaves and all of the fresh ingredients evenly with the chicken and sweetcorn on top. 
  5. Scatter the cheese and tortilla chips over and drizzle with ranch dressing and BBQ sauce. 
  6. Using a large, straight edge knife chopping across the entire board methodically from one end to the other.  Mix carefully and then chop again for the tastiest chopped salad!
