2 boneless salmon fillets
½ cup panko breadcrumbs
2 tsp dried mixed herbs
Salt and pepper to season
1 tbsp olive oil
2 tbsp Dijon mustard
½ tsp smoked paprika
½ tsp garlic powder
1/8 tsp ground cayenne pepper
1 bag Florette mixed salad
Cherry tomatoes
Mayonnaise (plain or garlic)
Lemon wedges to serve
Open the salmon fillets and pat dry to remove excess moisture.
In a bowl combine the panko, dried herbs, salt and pepper. Stir to combine then mix through the olive oil.
In another bowl mix the mustard, paprika, garlic powder and cayenne.
Spread the good dollop of mustard mixture over each salmon fillet then add the panko mixture to top and press to help it stick.
Air fry the salmon at 200degrees for 10-12 minutes.
Serve on top of some deliciously fresh Florette mixed salad and sweet cherry tomatoes with mayo and freshly squeezed lemon juice for a perfectly balanced and easy meal!
