1 pack of Florette mixed salad 

500g watermelon, peeled and cut into bitesize pieces 

1 tbsp harrisa paste 

4 tbsp olive oil 

1 x 250g pack halloumi, grated 

150g cucumber sliced and halved 

75g pomegranate seeds 

30ml / 2 tbsp runny honey 

a handful of leaves mint, shredded 

Method

  1. Start by heating a teaspoon of olive oil in a non-stick frying pan over medium heat, add the grated halloumi and allow to brown and crisp, moving quickly so it doesn’t completely melt – this whole process should only take a minute or so. 
  2. In a salad bowl begin with a layer of Florette mixed salad, add the watermelon and cucumber then top with half of the crunchy halloumi. 
  3. Whisk the olive oil and harissa paste and pour half over the salad keeping some back for extra dressing as required. Toss the salad to lightly coat in the dressing. 
  4. Scatter over the pomegranate seeds, torn mint and remaining crispy halloumi. 
  5. Finally drizzle or squeeze the honey over before serving for a deliciously crunchy, sweet, salty and punchy summer salad!
