3 slices prosciutto
1 mini cucumber, sliced
50g radishes, sliced
1 tablespoon grated hard Italian cheese
2 roasted chicken breasts, sliced
3 tbsp balsamic vinegar
3 tbsp cup extra virgin olive oil
1 tsp Dijon mustard
¼ tsp chili flakes
1 tbsp maple syrup
Salt and freshly ground black pepper to taste
Crisp the prosciutto by laying in a cold pan then bringing to a medium heat for 5-6 minutes until sufficiently dark and crispy. Leave to cool in the pan.
Mix the vinegar, oil, mustard, chili and maple syrup in a small jug to create the dressing. Season with salt and pepper to taste.
Split the salad, cucumber and radishes between two dishes and top each with a sliced chicken breast.
Sprinkle the cheese over each salad and drizzle a good amount of the dressing along each chicken breast. Finish by crumbing the crispy prosciutto over each salad – delish!
