Ingredients

  • 1/3 bag Florette crispy salad mix
  • 1 cup Graham’s cottage cheese
  • 1/3 cup chopped tomatoes
  • 1/3 cup chopped cucumber
  • 1/3 cup chopped sweet pepper
  • ¼ cup Kalamata olives, pitted
  • Pinch of fresh dill
  • Black pepper – no salt needed
  • EV olive oil for drizzling

Method

  1. In a pasta bowl add the salad, cottage cheese, chopped vegetables and olives.
  2. Top with fresh dill, cracked black pepper and a drizzle of olive oil – the salty olives and brine means you won’t need to season with salt.
  3. Enjoy this super quick and tasty high protein salad!
