Classic Crispy

Ingredients

Serves: 4

Florette crispy salad 

200g rice 

4 large eggs 

2 tablespoons olive oil 

2 cloves garlic, finely chopped 

2 tbsp brown sugar 

2 tbsp soy sauce 

1 tbsp ginger, finely chopped 

½ tsp dried chilli flakes 

500g minced beef 

2 spring onions, finely sliced 

1 tsp sesame seeds 

Method

  1. Cook the rice according to package instructions; set aside to cool.  
  2. Place your eggs in a large saucepan and cover with boiling water, boil for 4 minutes then drain and cool in cold water.
  3. In a small bowl whisk together the brown sugar, soy sauce, ginger and chilli.
  4. Heat olive oil in a large heavy-based pan over a medium heat and add the garlic.
  5. Stir for 1-2 minutes then add the beef and cook until evenly brown.
  6. Add the soy sauce mixture and half the spring onions, allowing to heat through.
  7. Layer your rice, Florette Crispy leaves and spiced beef into meal prep containers (or bowl if eating straight away). 
  8. Top with a boiled egg cut in half, a sprinkle of spring onion and sesame seeds (and chilli if you like it hot!) and off you go! A perfect high-protein lunch that’s easy and delicious.
