Classic Crispy

Ingredients

Serves: 2

• 200g leftover roast meats – optional
• 200g leftover vegetables
• 25g butter
• 6 eggs
• 100g cheese, any left in the fridge
• Salt and pepper
• Chipotle spice
• 1/3 bag of Florette Crispy Leaf Salad

Method

  1. Slice down the vegetables and meats, if using, into evenly cut dice.
  2. Heat up a non-stick pan and add the butter.
  3. When the butter starts to foam add the vegetables and meat if using, and fry until all the ingredients are hot.
  4. Whisk the eggs together with the salt and pepper and pour over the vegetables in the pan and stir through until fully covered.
  5. Sprinkle over any cheeses that you have in the fridge. Sprinkle over the chipotle spice.
  6. Place into a hot oven and bake for 10 minutes until golden and the egg is fully cooked.
  7. Serve with the Florette Crispy Leaf Salad.
