Classic Crispy

Ingredients

  • 1 bag of Florette Crispy salad
  • 4 slices of bread, (we’ve used pre-sliced Tigerbread)
  • 70g dried macaroni pasta
  • 70g grated mixed mozzarella and cheddar cheese (or your preferred cheese!)
  • 170ml milk
  • 4 rashers of cooked streaky bacon, finely chopped
  • Salted butter
  • 1 tbsp flour
  • ½ tsp mustard powder
  • ½ tsp nutmeg powder or freshly grated nutmeg
  • Salt & pepper

Method

  1. Cook the macaroni in salted boiling water until al dente (just undercooked). Drain and put back in the empty, warm pan with a little butter mixed through to stop it sticking together while we carry on.
  2. In a new, large saucepan melt 1 tbsp butter and mix the chopped, cooked bacon through.
  3. Add 1 tbsp flour to form a paste then gradually add the milk, whisking continuously.
  4. As the sauce thickens add in the mustard and nutmeg powder and season to taste.
  5. Turn the heat down as low as possible low and add the macaroni and cheese.
  6. Stir through for 1 minute then turn off the heat but keep the pan where it is to stay warm and gooey. (If you’re not making your toasted sandwiches straight away take it off the heat completely or the bottom layer of mac n cheese may stick to the pan.)
  7. Put your bread in to toast on a low setting so it is just starting to turn golden and harden up a bit.
  8. Butter each slice of toast and assemble the sandwiches with the mac n cheese in the middle and the butter on the outer faces (to be fried).
  9. Heat a non-stick frying pan over a low-medium heat and sprinkle with grated cheese – only a thin layer to cover the area the sandwiches will fit in.
  10. Immediately place the sandwiches on top of the melting cheese to form a crispy cheese crust on the sandwiches as they turn golden in the frying pan.
  11. Cook for around 45 seconds or until golden and crispy before carefully removing the toasted sandwiches and turning over onto a board or plate.
  12. Add another layer of cheese to the pan and return the toasties to cook on the other side with a cheesy crust.  Cook until golden brown and the mac n cheese is oozing out.
  13. Serve this brilliantly gooey mac n cheese toastie with our Crispy salad for the perfect crunch alongside that golden cheese crust!
