1/3 Cup Orange Juice Freshly Squeezed
1 Shallot Finely Diced
1 Tbsp Olive Oil
1 Tbsp Red Wine Vinegar
1 Tsp Dijon Mustard
1 Tsp Honey
Pinch Sea Salt
Pinch Pepper
1 Bag Florette Crispy Salad
1/3 Cup Flaked Almonds
1 Avocado, Sliced
1 Tin Mandarin Segments
½ Cup Pomegranate Seeds
In a small bowl or jug mix the orange juice, shallots, olive oil, vinegar, Dijon mustard, honey, salt and pepper. Whisk together to combine for the dressing.
In two large bowls or high sided plates, split the bag of Florette salad leaves and top with avocado, clementine, pomegranate seeds and almonds. Drizzle over the orange dressing just before serving for a sweet and crunchy salad with a zesty kick!
