Put the quinoa in a fine mesh sieve and rinse with water. Drain and place in a saucepan with 1 cup boiling water. Cook for 10-15 mins according to package instructions.
While it is being cooked, assemble the rest of ingredients in your bowl, with your hummus in the middle.
Add the quinoa and then add your lemon juice, salt, and mint/ basil evenly over the ingredients in the bowl.
