Baby Leaf Trio

Ingredients

  • ½ cup quinoa
  • 2 handfuls of Florette Baby Leaf Trio
  • ½ cup chopped cherry tomatoes
  • ½ cucumber
  • 1 bell pepper, sliced
  • ½ red onion, sliced
  • ½ can chickpeas
  • 12 kalamata olives (pitted)
  • 3 tbs hummus
  • 100g vegan feta
  • A few sprigs of mint and basil leaves
  • Juice of 1 lemon
  • Salt to taste

Method

  • Put the quinoa in a fine mesh sieve and rinse with water. Drain and place in a saucepan with 1 cup boiling water. Cook for 10-15 mins according to package instructions.
  • While it is being cooked, assemble the rest of ingredients in your bowl, with your hummus in the middle.
  • Add the quinoa and then add your lemon juice, salt, and mint/ basil evenly over the ingredients in the bowl.
