Ingredients

Serves: 2

1 tbsp vegetable oil

250g pork mince

1 small onion, halved and finely sliced

6 slices American cheese

2 tbsp salted butter

2 NYC style sub buns, halved and toasted

Ketchup and mayo, to serve

1 tomato, thickly sliced

2 large handfuls of Florette Mixed

For the adobo spice mix (or use 2 ½ tsp readymade Adobo seasoning):

1 tsp garlic granules

1 tsp flaky salt

½ tsp dried oregano

Pinch ground turmeric

Good crack of black pepper

Method

1. Put the oil into a large frying pan over a high heat. Once hot add in the pork mince and onions, fry while chopping with a spatula for 2 mins.

2. Add in the Adobo seasoning and fry for 2 more minutes, mixing it by chopping up the mix with a spatula. Press down the pork mince with the back of a spatula and evenly place over the American cheese slices. Cook for 1 – 2 mins to let the residual heat melt the cheese and allow the bottom crisp up.

3. Spread the butter on the toasted subs and add a layer of mayo and ketchup. Diving the pork filling into two semi-circles and squash with the spatula into a shape that will fit into the bun. Top the filling with tomato slices and Florette leaves before sandwiching together.
