½ Bag Florette Crispy Salad
60G Rice Noodles, Cooked
1 Tbsp Peanut Butter
1 Tsp Tamarind Paste,
1 Tsp Honey
1 Tsp Fish Sauce
1 Tsp Sriracha
1 Lime, Zest And Juice
1 Tsp Water (Plus More If Needed)
100G Cooked Chicken, In Bitesize Pieces
2 Spring Onions, Finely Sliced
5 Cherry Tomatoes, Halved
1/4 Carrot, Grated
1 Tbsp Roasted Peanuts, Chopped
Option – Green Finger Chillis
Mix the peanut butter, tamarind paste, honey, fish sauce, sriracha, lime zest and juice, and a little water until smooth (add more water if needed).
In a large bowl combine the chicken, spring onions, tomatoes and carrot, then add the sauce and toss through until everything is coated.
Add the noodles and mix through again. Top with the chopped peanuts and if you like, finely sliced green finger chillis for added heat!
