  1. 4 Boiled Eggs Diced and Slightly Mashed
  2. Florette Mixed salad leaves
  3. ¼ cup mayo
  4. 1 tsp Onion Powder
  5. 1 tsp Garlic Powder
  6. 1 tsp Achuete Powder (or Cajun spice powder)
  7. 1 tsp Fish Sauce
  8. 1 tsp Lemon Juice
  9. Ground Black Pepper
  10. Fluffy white bread, 4 slices
  11. 2 boiled eggs
  12. Mayo to serve (with sriracha if you like!)

Method

  1. Place the 4 boiled eggs, mayo, onion powder, garlic powder, achuete powder, fish sauce lemon juice and black pepper in a mixing bowl and combine. This is the Palabok egg mix!
  2. Place a whole or half-boiled egg in the middle of one slice of bread and build the Palabok egg mix around it.  Top with Florette salad and place the other slice of bread on top. Press lightly.
  3. To serve cut in half to reveal the middle of the egg, season with more achuete powder and black pepper to your taste.  There’s no way you will be able to resist eating this straight way but it will keep in the fridge for 24 hours if you want to get ahead!
