Japanese Katsu

Ingredients

Serves: 1

1 packet of ramen noodles (seasoning packet removed)

1 cup shredded sweetheart cabbage

1 tbsp sliced spring onions

1 tbsp olive oil

1 tbsp white wine vinegar

1 tbsp soy sauce

½ tsp soft brown sugar

Florette Katsu slaw

1/2 cup mixed peanuts and cashew nuts

1 tsp sesame seeds

Fresh coriander and lime wedges to serve.

Method

 

  1. Combine the oil, vinegar, sugar, and soy sauce in a jar and shake to make the dressing.
  2. Cook the noodles according to the packet instructions (usually takes just a few minutes to boil.)
  3. Shred the cabbage by slicing into 1cm thick strips then mix with the spring onions in a large bowl.
  4. Add the noodles to the cabbage mixture. Pour the dressing over it all and toss well to combine.
  5. Serve in a large bowl and sprinkle on the chopped nuts, sesame seeds and coriander leaves.
  6. Top with a good dollop of Katsu Slaw and enjoy this beautiful rainbow of deliciousness straight away!
