225g paneer

50g mixed Peppers

1tbsp sunflower Oil

2 tbsp tikka Masala Paste

4 tbsp Greek Yoghurt

Handful mint leaves

50g sliced cucumber

1 garlic clove, crushed

Salt and Pepper, to season

4 roti wraps

Florette Mixed Salad

20g sliced red onion

Mango Chutney

Method

  1. Cut the paneer into bitesize cubes. Add to a mixing bowl with the peppers, oil and curry paste. Mix thoroughly to coat the paneer and peppers in the paste.
  2. Add the paneer mix to a large frying pan over a high heat. Fry for 5 mins, turning the mix regularly, until the paneer is crisp on all sides.
  3. Meanwhile, to make the raita sauce, add the yogurt to a small bowl and tear in the mint leaves. Add the cucumber and garlic, season with salt and pepper then mix to combine.
  4. Take the paneer off the heat once cooked. Warm the roti wraps in the microwave following the packet instructions. Take a wrap and spoon over the tikka paneer and peppers mix, then dollop over some raita. Finish by adding a handful of Florette Mixed salad leaves, a sprinkle of red onion and a dollop of mango chutney.
