For the salad:

  • 100g Florette Mixed Salad
  • 1 cup halved cherry tomatoes
  • ¼ cup diced cucumber
  • 2 sliced green peppers
  • 1 large red onion, cut into rings
  • 200g cubed feta
  • Handful of mint
  • Olives to garnish 

For the dressing:

  • 1 lemon
  • 1 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • ½ tsp red pepper flakes
  • Salt to taste
  • 1 tsp pomegranate molasses (optional)

Method

  1. Put the chopped ingredients in a bowl.
  2. Chop mint and mix all together.
  3. To prepare the dressing, whisk together the lemon juice, balsamic vinegar, olive oil, pomegranate molasses (if using), red pepper flakes and salt.
  4. Pour it over the salad and give it a good stir. Serve immediately.
